- Nothing non-free is run on the host computer during installation
- Unsure of kernel being signed
- Kernel source code available (https://github.com/cyanogenmod/android_kernel_bn_encore)
- The device's sole network access is standard Wi-Fi (no modem); is this a problem? See my earlier suggestion of the Asus tablets.
Platform is TI OMAP 3. I haven't suggested any e-readers yet, but I figured there's no harm in it. If you're okay with this, we could try it "encore" :).

Looks good to me -- apparently it's using u-boot as last bootloader, so we may even run a free build of it on the device (unless it's signed).
There is nothing wrong with supporting wifi-only tablets, except that it will have nearly no connectivity out of the box.

I did build a version of Ubuntu Touch for Nook and it seemed to run okay, if not slow, so it should be entirely plausible to run this puppy without even touching the Main Storage.
