Is there a time where it is likely, there a people on irc replicant who
can tell how to install replicant on a samsung i9100 while installation takes place?

People hanging out in the irc channel are from all around the world and thus from different timezones. I guess that most are still from Europe, so if you pick a time that is in the afternoon in central Europe, you probably catch most of us there, including some from the US and maybe it's then still not too late for the Aussies ;)
Other than that, I can only recommend to follow the installation guide for your phone and ask questions along the way. But it is always possible that it takes a while until you get an answer.
